Melbourne Cup Carnival with James Boag was an experience I couldn’t have even dreamed about. It was a sensory overload combining the hype of the day’s festivities along with the aromas of James Viles’ culinary magic. James Viles is the owner and creator of Biota Dining located in the beautiful country town of Bowral, NSW. Teaming up with James Boag, they have collaboratively harnessed the purest ingredients to create an experience focused on the local, fresh, and wild ingredients of Tasmania, which is in line with James Boag’s life long dedication to brewing the freshest beer. Together they created “Harnessed By James Boag” a private dinning experience held in a secret restaurant within the Bird Cage. Viles’ showcased his adventures across Tasmania by presenting the individual ingredients he foraged that went into the dishes, creating a strong connection from paddock to plate.
